This is a very easy and delicious dish you can use as a side to a salad, as a starter or as part of a tapas serving.
One large baguette (or several small ones), you can easily use frozen, but they need to be thawed before you start.
Cherry tomatoes or similar small tomatoes
Good olive oil
Cut the baguette into small slices. Sprinkle a little bit of oil on each piece. Use a brush or similar to spread the oil on the surface.
Put the slices on a tray lined with baking paper and cook in the over at 200 degrees for 5 minutes.
Take the tray out.
Spread 1/2 to 1 tsp of pesto on each slice, cut up the tomatoes into quarters and put 2 – 3 wedges on each slice. Tear little bits of chevre and put a couple small pieces on each slice. Finish with a little sprinkle of pepper.
Cook in the oven at 200 degrees for 7 minutes.
I served this as starters to a group of friends. This is a delicious little mouth filler to tie your guests over until the dinner is ready.
I can recommend trying it as a side to tapas as well.
Make it healthier by using a whole wheat baguette.
Change the flavors by using red pesto or different cheeses, such as brie, gruyere or a blue cheese if you like that.
