A bulgur salad is a nice and filling, yet healthy meal. You can use it next to any protein really and just adjust the content of the salad. Using grain like bulgur adds some filling carbohydrates without being very heavy.
I tend to make these kinds of dishes when we hold off on our dinner until the boys are in bed. It is nice to have something a little bit more flavorful and interesting without it being an overpowering meal quite late during the day.
For this dish, I cooked some nice salami and serrano ham in the oven. This gives a good addition of meat and salt to the dish, without being too high in fat and too much food. You can of course use other meats or bacon too.
Bulgur for 2 people
Put the salami and serrano on a baking tray lined with baking paper. Put the oven on 200 degrees and cook for approximately 10 minutes. They should be crispy.
Meanwhile, cook the bulgur according to the instructions on the packaging. Cut the fruit and vegetable into small pieces. Cook the onion in a pan until glossy. Finely grate the cheddar. In a bowl, mix up all the ingredients for the salad. Hold the cheese and meat. Plate up the bulgur salad and garnish with the crispy meat and some cheddar.
Serve the dish with a little dollop of quark, creme fraiche or plain yoghurt. It adds a great freshness and balance to the dish and makes for a very simple dressing.
A nice herb bread will also fit perfectly as a side.
A nice and light red wine like a pinot noir in the glass will fit perfectly with this dish. If you use heavier meat, then I would suggest a slightly heavier red as well. An Italian Barolo or Amarone would fit nicely if you add some more flavorful meats like salami.
