Pizza is something the boys will always eat! If I ask what they would like for dinner, 9 our of 10 times, the 4 year old will answer pizza. He doesn’t get pizza 9 out of 10 times of course, but with some little tweaks to the recipes, you can easily make pizza a healthy meal for the family.
The quest for new, inspiring and healthy food for dinners continue. As the boys are still a bit young and picky in their dinner choices, I try to find quick and healthy alternatives for us adults to eat after the monkeys are in bed. One new dish I have tried that will definitely be made again is this fritatta. It is a pretty green dinner, but in a good way with all the added goodness of the healthy green vegetables. After a pretty cold Summer, we were starting to doubt that we would really get much of a crop this year, but suddenly 2 weeks ago, the strawberries started to ripen. Together with our trusted rhubarb, it makes for a delicious jam.
One of the vegetables that are growing really well this year is the kale. So now it is time to test out some various recipes with kale. If you have any good suggestions for something I can try, please feel free to share them with me.
Trying to keep the mid-week meals high in vegetables and low in fat is always a challenge, but this is definitely a new favorite for a mid-week dinner with the family. Continue reading
The Summer vacation came upon us just as quickly and surprisingly as it ended. I unintentionally took a break from the blog during this time and have now recently been working on some posts to get back on track with the blog again.
During the last couple of months, I have been so lucky to have been nominated for several awards too and my conscience is pretty horrible on that end. But, I am working on posts to say my thanks and respond to them all and hope to be posting them soon. All work in progress!
Recently I made an attempt at making the Japanese dumplings called Gyoza. I have to admit I did not have all the appropriate ingredients for the dish to make it fully Japanese, but they turned out delicious nonetheless.
Before you consider getting started, you need to find and buy gyoza wrappers. I found these in the freezer section in an Asian grocery store. The wrappers are extremely thin, but fairly easy to work with.
I love going into the local city center on a sunny Saturday morning when the shops are doing their very best to create life in the street. The lemon and pistachio cream is an idea gotten from Olivier’s & Co. They served fresh strawberries with the cream outside their shop a couple of weeks ago. Me, being a sucker for these little treats and offers, I of course had to buy the ingredients and use them for a dessert.
Finding new ways to update your recipes and using your garden vegetables is not always the easiest. But every now and then that little light bulb comes on. This was definitely one of those moments. I wanted to make a dessert for a dinner with friends, but I also wanted to “upgrade” it a little. Even if the calendar says June and it is supposed to be Summer, the weather seems to think it is October! The wind is howling outside and it is raining horizontally. But the weather forecast seems to be showing some improvement for the weekend. Fingers crossed that we will finally see some Summer weather and be able to bring out the shorts and t-shirts. It just feels weird sending your kids to kindergarten in June with woolen longs on. But with the cold wind and temperatures still in the single digits, there is just nothing to do about that. At least they don’t look at the calendar when we dress them in the morning still.
