The Summer vacation came upon us just as quickly and surprisingly as it ended. I unintentionally took a break from the blog during this time and have now recently been working on some posts to get back on track with the blog again.
During the last couple of months, I have been so lucky to have been nominated for several awards too and my conscience is pretty horrible on that end. But, I am working on posts to say my thanks and respond to them all and hope to be posting them soon. All work in progress!
Now this is just sticky, fluffy, sugar deliciousness! A childhood memory of birthdays with kids high on sugar after only a couple of bites! But so incredibly fun and delicious. I made this for our son’s 2nd birthday on the weekend and it was a hit with the kids indeed. Continue reading
I never strive to make overcomplicated and overly fancy meals. Quite frankly, I just don’t have time for it. I work full time and have my two little monkeys that deserve their attention for the few hours I see them every day. As such, most of our meals are quick and easy and so are the desserts I make. This one is probably among the easiest I have ever made. And with all the wonderful berries coming into season now, it is simply delicious.
It is always a challenge to find new and exciting dishes to serve that is interesting to both the kids and us adults. The boys are still so young that they really prefer fairly simple dishes and would happily eat sausages everyday if they had been allowed to. And it is really difficult not to end up in a circle of serving the same dishes over and over. Every now and then I come across ideas for dishes that I can use to make meals we can enjoy together with the boys and that can fairly easily be made into an interesting meal for everyone. Baking buns has always been a favorite in my kitchen. I find it easy and relaxing to make and such great fun to do with the kids. I always have cinnamon buns in the freezer, which is perfect if you get unexpected visitors. You can take them out and defrost in the oven very quickly and they will taste as if they were freshly baked. Mind they won’t keep very long after being reheated, but they are always best luke warm anyway and most times there won’t be anything left either. Continue reading
Baking with kids can be both fun and frustrating at the same time, but I have learnt to keep it as simple as possible when involving my two little monkeys. They are currently aged almost 2 and 4 and a bit years old. That proves a little bit of a challenge to allow them to attend at an equal level. The oldest is very good at helping, whereas the youngest believes he is very good at helping. 🙂 Recently, I found this recipe on Pamplemousse’s blog! I love trying out new twists when baking bread, trying to find a good combination of ingredients and also the right proving. Sometimes it fails completely and all I get is a brick that smells good, other times it is a great success! And the fun is in the testing and tasting afterwards.
Smoothie is a great snack to tie the kids over before dinner when they have had a long day in kindergarten and school, or as a healthy dessert after dinner. I find it a great dessert if they have not eaten too much of their dinner and I think they need a little bit more nutrition than what they have had during their meal. However, it is not always the easiest to think of new ingredients to test out new recipes, especially not when the kids are the judges. They tend to ask for what they know and like. But, during one of the last shops, Ralph discovered a frozen smoothie mix in the freezer section at the supermarket. This mix contains pineapple, mango and banana, so all that was needed to add was some liquid. Continue reading
Having two small boys, there is not always time for any fancy or time consuming dinners, and to be honest, they would much rather have a pizza or pasta and sausages than any fancy creations. Added then the dairy and egg allergy of the youngest, we have to look for suitable and fairly healthy alternatives that does not take hours to prep. One of these simple dishes that they love are pizza of course. But to change it up and to make it a quick meal, I use whole grain tortillas and just add the topping to them. Either store bought or homemade tortillas. If you use store bought, be aware of the content. A lot of the producers are getting better at using healthy oils, so stay away from the ones with palm oil and look at the fiber content and types of grain.
There is just nothing like a fresh and luke warm slice of bread!
