During the vacation time, we like to find new places to visit and sometimes you see an advertisement or even just a comment online and think “let’s check it out”. This place is one of those. I randomly saw a short note in a small pamphlet and thought we should go visit to see what it was like. With these places, it can be anything from a small run down farm shop (which we also found on our vacation) to and old majestic farm with the scenery and quality to go with it. This one was on the latter end of the scale. It is a huge old brick farm with a gorgeous yard.
Now this is just sticky, fluffy, sugar deliciousness! A childhood memory of birthdays with kids high on sugar after only a couple of bites! But so incredibly fun and delicious. I made this for our son’s 2nd birthday on the weekend and it was a hit with the kids indeed. Continue reading
I love going into the local city center on a sunny Saturday morning when the shops are doing their very best to create life in the street. The lemon and pistachio cream is an idea gotten from Olivier’s & Co. They served fresh strawberries with the cream outside their shop a couple of weeks ago. Me, being a sucker for these little treats and offers, I of course had to buy the ingredients and use them for a dessert.
The other day we had a Summer party at the kids’ kindergarten and as part of it there was a cake sale that we contributed to. For this event, I made a version of a carrot cake that I have made several times in the past. The major change I did this time is the sheer size of the cake and the use of white chocolate and a little bit of lemon.
This is a super moist and flavorful cake! The use of apples in the recipe adds a great deal of moisture and sweetness to the cake. The cake is easy to make, but takes a bit of time to make. It can easily be made the day before and then have the icing added before serving it. You can also freeze the cake if you don’t put icing on it. The carrot cake is a definite crowd pleaser and I received great feedback at the cake sale. Continue reading
I never strive to make overcomplicated and overly fancy meals. Quite frankly, I just don’t have time for it. I work full time and have my two little monkeys that deserve their attention for the few hours I see them every day. As such, most of our meals are quick and easy and so are the desserts I make. This one is probably among the easiest I have ever made. And with all the wonderful berries coming into season now, it is simply delicious.
Tomorrow, 17th May, is the Norwegian Constitution Day. And what is more appropriate than celebrating with a delicious chocolate cake. I am looking forward to the reactions from the boys. They have helped quality check the chocolate during the bake, but the decoration was delayed until after they were in bed. It will definitely be plenty of chocolate for them and the rest of the guests!
So what’s with all the travel posts from Denmark you may think?
I have recently been to Denamrk a few times to check on our holiday house down there. We will likely be going to Legoland every single year in the foreseeable future. Or at least there is a risk of that happening, but we will see. With two boys aged 2 and 4 years old, and a Lego loving uncle (even if he is slightly older …. almost 30 🙂 ) there will be Lego overload for years to come, especially for mum.
Baking with kids can be both fun and frustrating at the same time, but I have learnt to keep it as simple as possible when involving my two little monkeys. They are currently aged almost 2 and 4 and a bit years old. That proves a little bit of a challenge to allow them to attend at an equal level. The oldest is very good at helping, whereas the youngest believes he is very good at helping. 🙂 Recently, I found this recipe on Pamplemousse’s blog! Visiting Denmark, there are so many of the typical tourist attractions you tend to visit. And don’t get me wrong, we have been past a few of them too! But there are so many small and less known places to see and visit too. During our trip, I looked for places that could be interesting to both adults and the kids. I then quite randomly stumbled across an ad for Hopballe Mølle and we decided to give it a try for breakfast. They serve breakfast on the weekends between 09.00 and 11.45, brunch between 12.15 and 15.00 and then coffee and cake from 14.30 to 17.00. Continue reading
Easter is over for now and it is time to leave the cabin and clean out the kitchen leftovers! I tried to try use some of the staples and some of the leftovers in the candy bowls (yes, we have leftovers… 🙂 ), and decided to make some simple dairy free sugar cookies. The ones with the Easter egg chocolates on are not completely dairy free though.
I am not sure everyone agreed this counted as cleaning up in the kitchen, but no one complains when they get cookies. And I managed to use up some of the stuff I wanted to get out of the kitchen cupboards too. The best part is, we all have treats for the drive home! Continue reading
