Tomorrow, 17th May, is the Norwegian Constitution Day. And what is more appropriate than celebrating with a delicious chocolate cake. I am looking forward to the reactions from the boys. They have helped quality check the chocolate during the bake, but the decoration was delayed until after they were in bed. It will definitely be plenty of chocolate for them and the rest of the guests!
Baking buns has always been a favorite in my kitchen. I find it easy and relaxing to make and such great fun to do with the kids. I always have cinnamon buns in the freezer, which is perfect if you get unexpected visitors. You can take them out and defrost in the oven very quickly and they will taste as if they were freshly baked. Mind they won’t keep very long after being reheated, but they are always best luke warm anyway and most times there won’t be anything left either. Continue reading
So what’s with all the travel posts from Denmark you may think?
I have recently been to Denamrk a few times to check on our holiday house down there. We will likely be going to Legoland every single year in the foreseeable future. Or at least there is a risk of that happening, but we will see. With two boys aged 2 and 4 years old, and a Lego loving uncle (even if he is slightly older …. almost 30 🙂 ) there will be Lego overload for years to come, especially for mum.
During our Easter vacation, I received a wonderful message from Natascha that she had nominated the blog for a Lovely Blog award! It has taken a little bit of time to write the post linked to the nomination since we have been travelling, unpacking and just dealing with the household and the kids! But after a little bit of work, we are finally ready to thank you for the nomination and make our own post.
As part of the award, I am supposed to share 7 things about myself too.
1. I dislike snow. Actually, I think that goes for both of us. But being Norwegian and not liking snow tends to get a few funny comments.
2. I love coffee! But I don’t really drink it black, so I prefer to make a mocca on my own Isomac coffee machine. I used to have a red KitchenAid espresso machine and I love the design of it. But when we moved, the machine got upgraded. I still miss the look of the old one though, even if the new one makes better coffee and steamed milk.
3. We love wine, especially Italian Amarone and French Rhone reds, but always open to new recommendations and tastings.
4. I love cooking for friends and family, testing out new recipes and ingredients. They are my guinea pigs, whether they like it or not. 🙂
5. Ralph is the gardener and farm person, whereas Silje will happily pick and make food with the produce from the garden.
6. I love to involve the kids in the kitchen, even if it calls for added patience, safety measures and more mess than initially planned. It is great fun to see how they grow from being allowed to help with what mummy or daddy does.
7. I have a major fascination for little deli shops, tea shops, coffee shops and farmer’s markets. Ralph is convinced I am their dream customer as I just “have to buy something” every single time! If they sell cheese, salami, spices, tea, wine or similar, I am sold before I walk through the front door. Just like the shop at Hopballe Mill that we visited over Easter. The bags were rather full after my visit there! 🙂

Visiting Denmark, there are so many of the typical tourist attractions you tend to visit. And don’t get me wrong, we have been past a few of them too! But there are so many small and less known places to see and visit too. During our trip, I looked for places that could be interesting to both adults and the kids. I then quite randomly stumbled across an ad for Hopballe Mølle and we decided to give it a try for breakfast. They serve breakfast on the weekends between 09.00 and 11.45, brunch between 12.15 and 15.00 and then coffee and cake from 14.30 to 17.00. Continue reading
Earlier this week we had a very short escape to Copenhagen and even if this is not a travel blog at all,we still thought it would be nice to share a post on our little trip. As we had some business to attend to and a husband with a twisted knee, the trip did not allow for too much walking around.
