The Summer vacation came upon us just as quickly and surprisingly as it ended. I unintentionally took a break from the blog during this time and have now recently been working on some posts to get back on track with the blog again.
During the last couple of months, I have been so lucky to have been nominated for several awards too and my conscience is pretty horrible on that end. But, I am working on posts to say my thanks and respond to them all and hope to be posting them soon. All work in progress!
Yet “another rhubarb crumble” you might think, but this one has a tiny little twist as I have added a few sprigs of peppermint to the mixture. Getting the right balance gives a wonderful freshness to the pie without overpowering the rhubarb flavor. I recommend sticking to peppermint leaves when making this as other and stronger mint will quickly overpower the rest of the flavors in the pie.
I thought I’d break up the rhubarb feature with a bit of a healthy breakfast/lunch treat. These are easy to make, healthy, tasty and great for a quick breakfast or to have in the lunchbox. My boys also enjoy these, so I see it as a great way to get a bit of fiber into them as well. I even use them as a little snack to tie them over before dinner. Continue reading
A bulgur salad is a nice and filling, yet healthy meal. You can use it next to any protein really and just adjust the content of the salad. Using grain like bulgur adds some filling carbohydrates without being very heavy.
I tend to make these kinds of dishes when we hold off on our dinner until the boys are in bed. It is nice to have something a little bit more flavorful and interesting without it being an overpowering meal quite late during the day. Continue reading

Baking with kids can be both fun and frustrating at the same time, but I have learnt to keep it as simple as possible when involving my two little monkeys. They are currently aged almost 2 and 4 and a bit years old. That proves a little bit of a challenge to allow them to attend at an equal level. The oldest is very good at helping, whereas the youngest believes he is very good at helping. 🙂 Recently, I found this recipe on Pamplemousse’s blog! I love trying out new twists when baking bread, trying to find a good combination of ingredients and also the right proving. Sometimes it fails completely and all I get is a brick that smells good, other times it is a great success! And the fun is in the testing and tasting afterwards.
I have to admit, we don’t always feel like eating the same dinner as the boys. If they get to choose, they will have fish finger, nuggets, pasta or pizza, all of which can be made into fairly tasty and healthy dinners with some tweaks, but we tend to postpone dinner until the boys are sleeping at least a couple of days a week. That means we need to find dinners that are not too heavy or time consuming to make as it is not healthy or pleasant to go to bed feeling completely stuffed. A type of salad with some protein is a great late dinner and this one is with couscous. Continue reading

A good granola makes such a great part of a breakfast or evening snack. I have already posted one recipe for a granola, but have made some changes. This one contains less sugar than my previous recipe and more nuts and dried fruits.
