This year’s Summer has been a bit on the cold side, especially when comparing to last year which was completely awesome. This has lead to the growing season going ahead very slowly and us wondering whether we would have much to harvest at all this year. Luckily, the crops are now finally starting to show themselves and we have been able to enjoy homegrown food.

Whole wheat waffles with banana, dairy free

The Summer vacation came upon us just as quickly and surprisingly as it ended. I unintentionally took a break from the blog during this time and have now recently been working on some posts to get back on track with the blog again.
During the last couple of months, I have been so lucky to have been nominated for several awards too and my conscience is pretty horrible on that end. But, I am working on posts to say my thanks and respond to them all and hope to be posting them soon. All work in progress!

Rhubarb cordial

Cordial_IMG_6274The Summer is really not arriving this year in Norway. We are seeing record low temperatures for May and June is not seeming to get much better. Temperatures are still in the low teens and the garden progression is slow at best.

We are doing our best to use the limited produce we have already, but I hope we will be getting more fruits and vegetables to chose from soon. Continue reading

Celebratory fruit skewers

It has been a long and exhausting but fun day filled with way too much food. That is always the case when celebrating anything in Norway really and today we celebrated the Norwegian Constitution Day. The main cake of the day was featured in my previous post and that was a rich and flavorful cake that got the reaction you always want to get when putting time and effort into a good bake.

Chocolate cake for Constitution Day

Tomorrow, 17th May, is the Norwegian Constitution Day. And what is more appropriate than celebrating with a delicious chocolate cake. I am looking forward to the reactions from the boys. They have helped quality check the chocolate during the bake, but the decoration was delayed until after they were in bed. It will definitely be plenty of chocolate for them and the rest of the guests!

Banana oats cookies_IMG_5494Baking with kids can be both fun and frustrating at the same time, but I have learnt to keep it as simple as possible when involving my two little monkeys. They are currently aged almost 2 and 4 and a bit years old. That proves a little bit of a challenge to allow them to attend at an equal level. The oldest is very good at helping, whereas the youngest believes he is very good at helping. 🙂 Recently, I found this recipe on Pamplemousse’s blog! It is easy, few ingredients and such a simple and good treat for the kids! If you go easy on the chocolate, they are more food than treats too. Continue reading

Smoothie is a great snack to tie the kids over before dinner when they have had a long day in kindergarten and school, or as a healthy dessert after dinner. I find it a great dessert if they have not eaten too much of their dinner and I think they need a little bit more nutrition than what they have had during their meal. However, it is not always the easiest to think of new ingredients to test out new recipes, especially not when the kids are the judges. They tend to ask for what they know and like. But, during one of the last shops, Ralph discovered a frozen smoothie mix in the freezer section at the supermarket. This mix contains pineapple, mango and banana, so all that was needed to add was some liquid. Continue reading

Easy tortilla pizza

Having two small boys, there is not always time for any fancy or time consuming dinners, and to be honest, they would much rather have a pizza or pasta and sausages than any fancy creations. Added then the dairy and egg allergy of the youngest, we have to look for suitable and fairly healthy alternatives that does not take hours to prep. One of these simple dishes that they love are pizza of course. But to change it up and to make it a quick meal, I use whole grain tortillas and just add the topping to them. Either store bought or homemade tortillas. If you use store bought, be aware of the content. A lot of the producers are getting better at using healthy oils, so stay away from the ones with palm oil and look at the fiber content and types of grain.
