Summer berry jam

This year’s Summer has been a bit on the cold side, especially when comparing to last year which was completely awesome. This has lead to the growing season going ahead very slowly and us wondering whether we would have much to harvest at all this year. Luckily, the crops are now finally starting to show themselves and we have been able to enjoy homegrown food.

Whole wheat waffles with banana, dairy free

The Summer vacation came upon us just as quickly and surprisingly as it ended. I unintentionally took a break from the blog during this time and have now recently been working on some posts to get back on track with the blog again.
During the last couple of months, I have been so lucky to have been nominated for several awards too and my conscience is pretty horrible on that end. But, I am working on posts to say my thanks and respond to them all and hope to be posting them soon. All work in progress!

Off the beaten track – Billund Bageri (bakery)

20150427_102341So what’s with all the travel posts from Denmark you may think?
I have recently been to Denamrk a few times to check on our holiday house down there. We will likely be going to Legoland every single year in the foreseeable future. Or at least there is a risk of that happening, but we will see. With two boys aged 2 and 4 years old, and a Lego loving uncle (even if he is slightly older …. almost 30 🙂 ) there will be Lego overload for years to come, especially for mum.

Easter leftover sugar cookies

Easter is over for now and it is time to leave the cabin and clean out the kitchen leftovers! I tried to try use some of the staples and some of the leftovers in the candy bowls (yes, we have leftovers… 🙂 ), and decided to make some simple dairy free sugar cookies. The ones with the Easter egg chocolates on are not completely dairy free though.

Sugar cookies_IMG_4762I am not sure everyone agreed this counted as cleaning up in the kitchen, but no one complains when they get cookies. And I managed to use up some of the stuff I wanted to get out of the kitchen cupboards too. The best part is, we all have treats for the drive home! Continue reading

Blood orange marmalade

a_IMG_3629
Oranges is a must for Easter in Norway. And with tradition comes specials at the supermarkets. Recently, we’ve kept finding blood oranges on special when doing grocery shopping. This has left a little bit if challenge on how to use these little sweet wonders to make tasty food. My last attempt was actually to make some citrus marmalade. And now I can’t wait to try eat it.
