Fritatta with green vegetables

The quest for new, inspiring and healthy food for dinners continue. As the boys are still a bit young and picky in their dinner choices, I try to find quick and healthy alternatives for us adults to eat after the monkeys are in bed. One new dish I have tried that will definitely be made again is this fritatta. It is a pretty green dinner, but in a good way with all the added goodness of the healthy green vegetables. Off the beaten track in Denmark – Fru Møller’s Mølleri (mill, restaurant, farm shop and butcher)

During the vacation time, we like to find new places to visit and sometimes you see an advertisement or even just a comment online and think “let’s check it out”. This place is one of those. I randomly saw a short note in a small pamphlet and thought we should go visit to see what it was like. With these places, it can be anything from a small run down farm shop (which we also found on our vacation) to and old majestic farm with the scenery and quality to go with it. This one was on the latter end of the scale. It is a huge old brick farm with a gorgeous yard.

Whole wheat waffles with banana, dairy free

The Summer vacation came upon us just as quickly and surprisingly as it ended. I unintentionally took a break from the blog during this time and have now recently been working on some posts to get back on track with the blog again.
During the last couple of months, I have been so lucky to have been nominated for several awards too and my conscience is pretty horrible on that end. But, I am working on posts to say my thanks and respond to them all and hope to be posting them soon. All work in progress!

Savoury muffins

It is always a challenge to find new and exciting dishes to serve that is interesting to both the kids and us adults. The boys are still so young that they really prefer fairly simple dishes and would happily eat sausages everyday if they had been allowed to. And it is really difficult not to end up in a circle of serving the same dishes over and over. Every now and then I come across ideas for dishes that I can use to make meals we can enjoy together with the boys and that can fairly easily be made into an interesting meal for everyone. Crisp bread with dates

A good crisp bread is great for breakfasts, lunch boxes or as a mid-day snack to tie you over. This one is slightly different to what I have made before, with chopped dates embedded in them, making these ones great as tapas sides with salty cheeses and salamis. I actually made these for a tapas and wine tasting evening we had with some friends. And I will share recipes for some of the other dishes I made in the coming days.
