Pizza is something the boys will always eat! If I ask what they would like for dinner, 9 our of 10 times, the 4 year old will answer pizza. He doesn’t get pizza 9 out of 10 times of course, but with some little tweaks to the recipes, you can easily make pizza a healthy meal for the family.
The quest for new, inspiring and healthy food for dinners continue. As the boys are still a bit young and picky in their dinner choices, I try to find quick and healthy alternatives for us adults to eat after the monkeys are in bed. One new dish I have tried that will definitely be made again is this fritatta. It is a pretty green dinner, but in a good way with all the added goodness of the healthy green vegetables. After a pretty cold Summer, we were starting to doubt that we would really get much of a crop this year, but suddenly 2 weeks ago, the strawberries started to ripen. Together with our trusted rhubarb, it makes for a delicious jam.
This year’s Summer has been a bit on the cold side, especially when comparing to last year which was completely awesome. This has lead to the growing season going ahead very slowly and us wondering whether we would have much to harvest at all this year. Luckily, the crops are now finally starting to show themselves and we have been able to enjoy homegrown food.
I absolutely love a good focaccia. Focaccia is one of those sides that fit with almost any meal. You just change the seasoning on top (or inside) of the bread to fit whatever you are pairing it with. Good bread and especially a good focaccia is one of those things I just can’t stop eating, so I have tried a few recipes with whole grain flour to make it a little healthier. The Summer vacation came upon us just as quickly and surprisingly as it ended. I unintentionally took a break from the blog during this time and have now recently been working on some posts to get back on track with the blog again.
During the last couple of months, I have been so lucky to have been nominated for several awards too and my conscience is pretty horrible on that end. But, I am working on posts to say my thanks and respond to them all and hope to be posting them soon. All work in progress!
Recently I made an attempt at making the Japanese dumplings called Gyoza. I have to admit I did not have all the appropriate ingredients for the dish to make it fully Japanese, but they turned out delicious nonetheless.
Before you consider getting started, you need to find and buy gyoza wrappers. I found these in the freezer section in an Asian grocery store. The wrappers are extremely thin, but fairly easy to work with.
Finding new ways to update your recipes and using your garden vegetables is not always the easiest. But every now and then that little light bulb comes on. This was definitely one of those moments. I wanted to make a dessert for a dinner with friends, but I also wanted to “upgrade” it a little. I never strive to make overcomplicated and overly fancy meals. Quite frankly, I just don’t have time for it. I work full time and have my two little monkeys that deserve their attention for the few hours I see them every day. As such, most of our meals are quick and easy and so are the desserts I make. This one is probably among the easiest I have ever made. And with all the wonderful berries coming into season now, it is simply delicious.
