Dinner at a pop-up restaurant

It is always exciting to try out new and innovative food. Every year there is a large food festival in Stavanger, called Glad Mat (happy food), where the entire harbour area in town is filled with food stalls by producers, restaurants and other organizations within the food industry. The restaurants in the region often have special menus featured, there are concerts in town and just overall a great buzz in the entire city.

Summer berry jam

This year’s Summer has been a bit on the cold side, especially when comparing to last year which was completely awesome. This has lead to the growing season going ahead very slowly and us wondering whether we would have much to harvest at all this year. Luckily, the crops are now finally starting to show themselves and we have been able to enjoy homegrown food.

Spring garden

It has been an incredibly slow blog week. We are moving into the Summer holidays with lots to finish up at work before everyone heads of for their vacations, which is wonderful on it’s own, but has taken the focus off my food making and even more so the blog. However, the garden is progressing, albeit very very slowly this year as we are seeing record low temperatures for May and June. This is pushing back the expected harvest by quite a few weeks. This time last year, we were harvesting potatoes and strawberries and seeing a lot more progression in general in the garden. Quite a bit of the crop may not grow to full maturity with the weather we are seeing so far. Continue reading

Rhubarb cordial

Cordial_IMG_6274The Summer is really not arriving this year in Norway. We are seeing record low temperatures for May and June is not seeming to get much better. Temperatures are still in the low teens and the garden progression is slow at best.

We are doing our best to use the limited produce we have already, but I hope we will be getting more fruits and vegetables to chose from soon. Continue reading

White chocolate mousse with berries

I love going into the local city center on a sunny Saturday morning when the shops are doing their very best to create life in the street. The lemon and pistachio cream is an idea gotten from Olivier’s & Co. They served fresh strawberries with the cream outside their shop a couple of weeks ago. Me, being a sucker for these little treats and offers, I of course had to buy the ingredients and use them for a dessert.

Finding new ways to update your recipes and using your garden vegetables is not always the easiest. But every now and then that little light bulb comes on. This was definitely one of those moments. I wanted to make a dessert for a dinner with friends, but I also wanted to “upgrade” it a little. Summer potato salad

Even if the calendar says June and it is supposed to be Summer, the weather seems to think it is October! The wind is howling outside and it is raining horizontally. But the weather forecast seems to be showing some improvement for the weekend. Fingers crossed that we will finally see some Summer weather and be able to bring out the shorts and t-shirts. It just feels weird sending your kids to kindergarten in June with woolen longs on. But with the cold wind and temperatures still in the single digits, there is just nothing to do about that. At least they don’t look at the calendar when we dress them in the morning still.

Spring is here! Peppermint tea

Trying to enforce some childhood memories for the boys through some of our own. More precisely Ralph’s childhood memories of the fresh homemade peppermint tea. This is so simple and so delicious and it gives the best spring feeling on a sunny day. Bringing this on to our boys, being able to just pick the fresh ingredients in the garden and make something delicious and creating some great memories for them is why we do it all. Continue reading
